- 1/2 cup Pumpkin puree
- 3 tbsp Almond butter
- 1 1/2 tsp Vanilla extract
- 1/3 cup Maple syrup
- 1/2 tsp Pumpkin spice blend
- 2 cups Rolled oats
- 1/3 cup Pecans, chopped
- 1/4 cup Dried cranberries
Preheat oven to 325 F.
Line baking sheet with parchment paper.
Mix together the pumpkin puree, almond butter, vanilla, maple syrup, and pumpkin spice blend.
Pour in the rolled oats, pecans, and cranberries. Fold in mixture and make sure everything is evenly coated.
Place the mixture onto the baking sheet and spread contents out into small clusters.
Bake at 325 F for 12 minutes.
Remove from the oven and stir the granola around. Bake it again at 325 F for another 14 minutes.
Remove from the oven and allow granola to cool for 15 minutes. Store in an airtight container until ready to serve.
